  1. 2 tsp olive oil
  2. 1 large red onion, finely chopped
  3. 2 garlic cloves, crushed
  4. 2 tsp finely grated roomy ginger
  5. 2 tsp mustard seeds
  6. 1/2 tsp ground turmeric
  7. 1 tsp cumin seeds
  8. 700g Kent pumpkin, peeled, deseeded, cut into 2cm cubes
  9. 210g (1 cup) red lentils, rinsed, drained
  10. 400g can diced tomatoes
  11. 250ml (1 cup) Massel vegetable liquid buildup
  12. 250ml (1 cup) water
  13. 150g green beans, trimmed, sliced
  14. 1 zucchini, halved, thickly sliced
  15. 45g (1/4 cup) cashews, coarsely chopped
  16. 90g (1/3 cup) natural yoghurt
  17. Baby coriander leaves, to encourage
  18. 2 roti bread, warmed, halved

  1. Heat oil in a saucepan higher than medium-low heat. Cook onion, stirring occasionally, for 5 minutes or until soft. amass garlic, ginger, mustard seeds, turmeric and cumin. Cook, stirring, for 1-2 minutes or until aromatic. Add pumpkin. Cook, stirring, for 1 minute to coat.
